granola

Servings : 8 cups Category : 0
Author : brooke wagen

---- ingredients ----------------------------------------------
oats 7.00 cup
brown sugar 0.75 cup or honey
corn oil 1.00 cup
water 0.50 cup
cinnamon 1.00 tsp and maybe a little allspice?
raisins 1.50 cup or more, and other fruit?

---- steps ----------------------------------------------
Butter a 9x13" baking pan (high sides) and preheat oven to 325 F. Combine the oats, sugar or honey, water, oil and spices, and stir well, until evenly mixed. Use a BIG bowl. Pour into the baking pan, and start baking. Set timer for 20 minutes.
----
The total baking time will be between 40 and 50 minutes. After the initial 20, take out granola, stir CAREFULLY (i spill every time) and place back in oven. Remove and stir every ten minutes. The cooking speeds up towards the end, so watch for browning carefully. It will look like nicely toasted granola when you're done - i don't have any other way to check for doneness. Let cool in the pan (it will take a few hours), and then add the dried fruit. Baking the fruit ruins it.
----
The granola, once cool, should be stored in tupperware for airtightness. It keeps for months, but it never lasts that long around our house.

Hurley additions: we add 1 t. salt, and increase the cinnamon to 2 teaspoons.

dried cranberries, while increasing the cost, also add great enjoyment to the cereal.
